Three Chefs Bring Different Flavors to the Rooftop
Chef Carlos Rodriguez of SEEN Rooftop will showcase Nikkei cuisine, where Japanese culinary techniques meet Peruvian ingredients and flavors. One of his featured dishes is Truffle Trouble Ceviche, combining white fish, shrimp, fried calamari, and black truffle tiger’s milk with crispy corn tortillas.
Chef Rodriguez will also serve Black Angus Beef Cheek al Tequila. The beef cheek is marinated with ponzu and tequila and presented over jalapeño potato foam, creating a dish that brings together richness, acidity, heat, and Japanese-influenced seasoning.
