His most recent role at Brasserie Palmier at Four Seasons Bangkok has already earned him local acclaim.

Now, at the helm of the kitchens at Hotel Indigo Bangkok, Chef Raynal is tasked with rejuvenating the hotel’s food and beverage offerings to reflect the vibrancy of Bangkok’s dynamic dining scene. One of the first major initiatives under Chef Raynal’s leadership is the launch of a bold new menu at CHAR Restaurant, scheduled to debut on Wednesday, February 5th, 2025. Embracing a “modern brasserie” concept, the refreshed offerings are a celebration of comforting yet elevated fare. Diners can look forward to creative dishes like Scallop Tiradito, a zesty spin on traditional ceviche, alongside time-honored favorites such as Chicken Cordon Bleu. But CHAR Restaurant is only the beginning. Guests can anticipate a calendar of special dining events including romantic Valentine’s dinners, innovative four-hand collaborations, business lunch sets, and seasonal tasting menus spotlighting premium ingredients. The transformation also extends skyward to the CHAR Rooftop Bar, where a refreshed menu now features internationally-inspired small plates like Marinated Sardines Tartine, Pork Rillette with Fresh Green Peppers, and delicate Citrus Madeleines—each paired beautifully with signature cocktails against the Bangkok skyline.

Later this year, Metro On Wireless and 22 Steps Craft House will also undergo significant culinary revamps, signaling a full-throttle relaunch of the hotel’s entire gastronomic identity.
