Building on Thai culinary wisdom rather than moving away from it, Front Room’s chefs have used carefully selected ingredients and contemporary cooking techniques to reinterpret dishes that remain recognizably Thai. Midway through the restaurant’s latest culinary evolution, this Bangkok Hotels Food Promotions News report looks at how Front Room is balancing heritage with creativity, allowing diners to rediscover familiar flavors through new textures, combinations and refined presentation.
Thai Heritage Takes a Contemporary Turn
The philosophy behind the new menu is to preserve the identity of traditional Thai dishes while finding new ways to express them.
“Thai cuisine has a depth to it in terms of flavors, ingredients, and culinary wisdom,” says Chef Aon Atiti Muangthong, Head Chef of Front Room.
Chef Aon says the menu was created with the intention of reinterpreting familiar dishes while retaining the essence of their original flavours. Changes in cooking techniques, composition and presentation are then used to give diners a different perspective on Thai cuisine.
Grilled Beef and Seafood Lead the New Dishes
Among the highlights is Grilled Beef Salad with Roasted Eggplant, inspired by traditional roasted eggplant chilli paste and Thai beef salad.
Front Room uses Black Angus sirloin beef, grain-fed for 270 days, which is carefully grilled and paired with smoky eggplant and chilli peppers. A light, spicy dressing cuts through the richness of the beef while maintaining the refreshing character associated with Thai salads.

Seafood also plays a major role. Seafood in Soy Sauce Broth draws inspiration from traditional Thai coastal cuisine, with a clear broth simmered from sea-fish bones and infused with soy sauce, ginger, lemongrass and shallots.
The aromatic broth is served with Andaman grouper, tiger prawns, Chanthaburi squid and premium crab meat, bringing together some of the flavors and ingredients associated with Thailand’s coastal waters.
Another new creation, Stir-fried Red Snapper with Celery, takes the familiar Thai combination in an unexpected direction. Front Room prepares a green celery sauce influenced by Italian pesto, using it to capture the fresh aroma of celery while presenting the fish in a more contemporary style.
Steamed squid with lime has also been reimagined and is served with two seafood dipping sauces offering contrasting but complementary flavors.

Thai Curries Get a Front Room Makeover
Traditional curry flavors remain an important part of the menu. Green Curry with Fried Black Pomfret is prepared with Front Room’s curry paste, fresh coconut milk and fragrant Thai basil. Crispy fried black pomfret is paired with the rich green curry, adding a contrasting texture to the creamy and aromatic sauce.
The seafood theme continues with Choo Chee with Prawns and Grilled River Prawns. Its Choo Chee sauce is enriched with prawn roe and prawn powder, intensifying the seafood character before being served with large grilled river prawns prized for their succulent texture and natural sweetness.
These dishes illustrate Front Room’s broader approach: the foundations remain recognizably Thai, while adjustments in technique, texture and presentation provide a more contemporary dining experience.
Isaan Inspires a New Three-Course Lunch
Alongside the à la carte menu, Front Room is introducing a new three-course lunch set inspired by the ingredients and culinary heritage of Isaan.
Northeastern Thai cuisine is known for fermentation, preservation, grilling, chilli pastes, fresh vegetables and bold combinations of salty, sour, spicy and savory flavors. Front Room draws on those traditions while presenting them through the restaurant’s modern culinary style.

The meal begins with dishes including Angus Beef Fermented Sausage with Eggplant Relish, combining traditional fermented-meat techniques with eggplant relish and local vegetables.
Cucumber Salad with Fermented Fish Sauce and Salted Egg highlights fermented fish sauce, one of the defining ingredients of Isaan cooking, while balancing its savory intensity with refreshing cucumber and the richness of salted egg.
Rather than treating fermentation merely as a source of flavor, the menu recognizes it as part of the preservation knowledge that has influenced Northeastern Thai cuisine for generations.
Regional Ingredients Move into the Spotlight
The lunch set’s main courses continue the journey through Isaan.
Grilled Chicken with Mushroom Chilli Paste reflects the straightforward dining traditions of the Northeast, where grilled meats and intensely flavored chilli pastes are familiar features of the table.
Other choices include Spicy Black Pomfret Fish Soup and Stir-fried Fern Shoots with Garlic, the latter highlighting naturally available ingredients prepared in a relatively simple manner.
Together, the dishes reflect Front Room’s intention to showcase local ingredients without losing sight of their regional origins. Contemporary presentation adds polish, but the flavors and techniques remain connected to the culinary identity that inspired them.

A Refreshing Mulberry Finish
Dessert brings the Isaan-inspired lunch to a lighter finish with Mulberry Sorbet served with Crispy Rice Crackers.
The refreshing sorbet draws inspiration from mulberries grown in the Northeast, while the crispy rice element creates an additional connection to the region’s agricultural landscape and food culture.
The combination completes a lunch menu that moves through fermentation, grilled meats, chilli pastes, seafood and local vegetables before finishing with fruit and rice.
Front Room Looks Deeper into Thailand’s Regions
The lunch set forms part of Front Room’s broader concept of exploring Thailand’s regional cuisines through a contemporary lens.
Local ingredients and traditional techniques remain central to that approach, but the restaurant also wants to tell the stories behind the food. Preservation methods, regional produce and everyday eating traditions become part of the experience rather than simply background inspiration.
For diners already familiar with Isaan food, the menu offers a different interpretation of recognizable ingredients and flavors. For international visitors, it provides an introduction to Northeastern Thailand’s culinary identity within the sophisticated setting of Waldorf Astoria Bangkok.

Thai Tradition Meets a New Generation
